Squash Slaw
Squash Slaw
 

4 cups spaghetti squash, coarsely grated

½ cup carrots, coarsely grated

¼ cup red bell pepper, finely diced


Dressing:

1-2 Tb olive oil

2 Tb water

1 tsp lemon juice

1 tsp maple syrup

¼ tsp ginger powder

¼ tsp spike seasoning or pepper

 

Toss squash, carrot, and red pepper in salad bowl.  In small bowl whisk together dressing ingredients until well-mixed.  Toss dressing with salad just prior to serving.
