Joyce's Oatmeal Buns
Joyce's Oatmeal Buns

Pour 2 cups of boiling water over 1 cup quick oats.

Add:

2 TBS. oil

1½ tsp. salt

¼ cup molasses

¼ cup Sucanat


Mix together in a separate bowl:


2 TBS. yeast

½ cup warm water

1 tsp. sugar (uses raw sugar)


When oat mixture is cool, add yeast mixture, and then add:


1 cup whole wheat pastry flour

1 cup spelt flour

And up to 4 cups unbleached white flour.


Knead for 10 minutes. Let rise till double. Punch down and form in to buns with enough space so buns can rise double without touching. Bake at 350 for 15 minutes. Makes 24
