Baked Oatmeal
Baked Oatmeal

3 cups old-fashioned oats

½ cup shredded coconut (preferably unsweetened)

¾ cup chopped nuts

½ cup chopped dates

½ cup raisins

¼ cup chopped dried pineapple or papaya

½ tsp salt

3 cups boiling water

1 cup soy milk


Combine all dry ingredients well. Pour liquid over dry and mix well. Pour all into a sprayed 9x13 baking dish, and bake at 375 degrees for 30-40 minutes. Serve immediately, with soy milk and fresh fruit on top.

(To reduce sweetness, cut the amount of dried fruit in half.)
