Coffee Cake, Streusel-filled

Batter : ½ cup natural cane sugar

¼ cup canola oil

1 "egg" of EnerG egg replacer (1.5 tsp powder & 2 Tbsp warm water – stirred)

1 cup soy, rice, or almond milk

1½ cups whole wheat pastry flour

2 tsp. baking powder

¼ to ½ tsp. salt

Mix together 1st 3 ingredients, then add milk and stir again. Add dry ingredients and stir all together. Pour apx. half of batter into the bottom of a 8 x 11 pan (sprayed 1st with non-stick cooking spray). Then sprinkle half of streusel mix, pour remaining batter over the mix, and then top with last half of streusel mix. Bake at 375 oven for apx. 30-35 minutes (check to see when knife comes out clean).

Streusel Mixture: ¼ to ½ cup brown sugar

2 Tbsp. whole wheat pastry flour

2 tsp. cinnamon

1½ Tbsp. Earth Balance (softened)

½ cup chopped nuts

Mix 1st 3 ingredients together, and then cut in Earth Balance. Finally, stir in nuts.
