Waffles, whole-grain
1 cup soy, rice, or almond milk
2 tsp lemon juice
1 cup regular or quick rolled oats
3/8 cup whole wheat flour
3/8 cup cornmeal
1/4 cup wheat germ
1/2 tsp salt
1 tsp baking powder
1 cup cooked garbanzo beans
1 cup water
1 tsp vanilla
 
     Combine soy milk and lemon juice and set aside (this will curdle a bit, like buttermilk).  In large mixing bowl combine oats, flour, cornmeal, wheat germ, salt, and baking powder.  Blend beans, water, and vanilla.  Add this mixture and the milk mixture into the dry ingredients and mix into batter.  Pour batter into sprayed waffle iron (make sure to cover each part of the iron with batter).  Bake 10 minutes.  Makes about 4 average size waffles.
