Cornbread Dressing

Cornbread Dressing

6 cups cubed cornbread (1 recipe yeast raised cornbread)
½ cup chopped celery
½ cup chopped onion
1 cup chopped walnuts
2 TBS. parsley
2 tsp. rubbed sage
1 tsp. basil
1 tsp. onion powder
1 tsp. savory
1 tsp. thyme
1 tsp. salt
Combine ingredients in large bowl

Mix together:
2 TBS. chicken style seasoning
2 TBS. olive oil
3 cups water
Pour over the bread mixture.  Place in a 9”x12” baking dish and cover.  Bake @ 350 for 30 minutes.  Uncover and bake 15 minutes more until lightly browned.

2 cups warm water
1 rounded TBS. yeast
2 TBS. honey

2 tsp. salt
¼ cup olive oil
1 ½ cup cornmeal
1 cup whole wheat pastry flour
1 cup unbleached white flour
Mix 1st. three ingredients and allow to proof.  Add the remaining ingredients and mix only enough to evenly moisten the batter.  Place in a 9”x9” baking dish, sprayed with non-stick spray.  Cover with plastic wrap, stretching the plastic tightly across the baking dish.  Let rise about 20 minutes, until batter has doubled.  Remove plastic wrap and bake at 400 degrees for 35-40 minutes until golden brown.  Allow to cool slightly before removing from pan.
