Peanut Sauce
Peanut Sauce
1/2 cup "chicken" stock
1/4 cup onion finely chopped
1 fresh hot green chili (or spot of cayenne, or sprinkle of red pepper flakes or combo of both - to taste!)
2 cloves garlic minced
1 1/2 t fresh ginger
1 T soy sauce
2 T brown sugar (can use a little less)
2 T lemon juice
1/2 cup crunch p'nut butter 
1/2 cup "chicken" stock (can use more if a thinner sauce is desired)

Simmer onion in stock.   Add next 6 ingredients.  Stir in p'nut butter and thin with final amount of stock.
