Tomato-Spinach Soup

Tomato-Spinach Soup

1 TBS. olive oil

1 medium onion, chopped

2 cloves garlic, crushed

1 28 oz. can chopped tomatoes

1 15 oz. can tomato sauce

1 lb. bag of fresh spinach, chopped

¼ tsp. cayenne pepper

1 tsp. oregano

1 cup rice

3-5 cups water

Salt & pepper to taste

Saute’ onion and garlic in olive oil. Add tomatoes, tomato sauce, spinach, rice, water and spices. Simmer for 20 minutes or until rice is cooked. Chop in food processor if desired or serve chunky.
