Spanish Rice

Spanish Rice

1 cup onions, chopped
1 cup green peppers, chopped
3 cups cooked brown rice
1 can chili-ready tomatoes
1/2 cup tomato sauce
1/4 tsp salt
1/4 tsp black pepper

Saute onions and peppers 5-10 minutes until they begin to soften. Add remaining ingredients and continue to stir while heating through, about another 10 minutes.  Serves 6.
(For a less spicy version, use plain diced tomatoes, and then add chili powder to taste.)
