Mixed Berry Whole Grain Coffee Cake

Oat mixture:

Mix 3 TBS. Earth Balance, 1 cup quick cooking oats, cup of flour & cup Sucanat. Set aside.

In another bowl mix:

cup Sucanat

1 cup unbleached flour

1 cup whole wheat flour

1 TBS baking powder

1 tsp. cinnamon

tsp. salt

cup canola oil

1 cup unsweetened non-dairy milk

2 TBS. water + 1 tsp. egg replacer (mix together)

2 cups blackberries

1 cup blueberries

cup chopped walnuts

Spread the batter in pan, sprinkle with the oat mixture. Add remaining batter and sprinkle other of oat mixture on top. Sprinkle with walnuts. Bake 350 degrees for 40-45 minutes. Serves 12.
