Millet Pudding

Millet Pudding

cup millet, uncooked
4 cups soy milk, rice milk, or almond milk
1/3 cup raisins
1/3 cup dates, chopped
2 tsp vanilla extract
tsp cinnamon or 1 cinnamon stick
tsp each lemon zest and orange zest (optional)

Preheat oven to 350 degrees. In a medium-sized casserole, combine all ingredients and mix well. Cover dish and bake for 45 minutes. Garnish with mandarin orange segments or fresh fruit of choice. Serve warm or cold.
