Muffins, Oatbran Raisin Applesauce

Oatbran Raisin Applesauce Muffins

1/2 cup packed brown sugar
1-1/2 cups Hodgson Mill oat bran cereal
1-1/2 cup whole wheat pastry flour
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1/2 tsp salt
2 egg replacers
1 cup applesauce, chilled
4 Tb oil
1 cup raisins (and/or craisins or nuts)

Preheat oven to 400 degrees.  Spray muffin pan.  Blend together dry ingredients, then add egg replacer, applesauce, and oil.  Put in muffin pan and let stand 10 minutes.  Bake for 15 minutes until golden brown.
