Flatbread Sandwiches

Flatbread Sandwiches

4 large round flatbreads, such as pita bread
1 recipe Hummus:  (or 1 1/2 cups prepared hummus)
1 can (15 oz) garbanzo beans, rinsed
3-4 Tb lemon juice
1-2 cloves garlic
1-2 Tb tahini or olive oil
dash of salt
1/4tsp-cumin
water as needed (about 1/4 cup)

Combine all ingredients in food processor and blend until very smooth, adding small amounts of water as needed to create desired consistency. After processing, adjust seasonings as desired.

TOPPING:

1/2 cup tomato, diced
1/2 cup bell pepper, diced
1/2 cup black beans
1/2 cup black olives, diced
1/4 cup banana pepper rings, diced
1/4 cup green onion, diced
1/4 cup cilantro, diced (optional)
2 tsp lime juice

To build the flatbread sandwich:  Divide the hummus evenly amongst the four pitas and spread smooth.  With a knife or pizza cutter, cut pitas into four sections.  Combine topping ingredients in bowl and mix well.  Divide topping evenly amongst the pitas.  Top each pita, and serve.  Makes 16 small wedges.
