Brussel Sprouts Salad

1 cup croutons

3 tbsp olive oil

2 cloves garlic, minced

1 small red onion

4 Tbsp lemon juice

16 oz. Brussels sprouts (pre-shredded bags are easy)

½ cup fresh parsley

¼ cup fake parmesan cheese

¼ tsp salt

 

Peel and halve the onion, then slice.  Heat 1 Tbsp. oil in saute pan and add onion and garlic over low heat.  Season with salt and cook slowly until tender.  Remove the pan from heat and add lemon juice and 2 tbsp. olive oil to pan.  Let rest. 

 

Slice Brussels sprouts and put in mixing bowl. Pour the onion mixture over this and toss well.  Add parsley and parmesan cheese and croutons.  Serves 4
