PITA PIZZA


1 package whole wheat pita bread

Spaghetti Sauce or pizza sauce

Quick and Easy Cheese (see recipe below)

Topping Ideas:  Diced tomatoes, chopped onions, garlic peppers, sliced ripe olives, burger crumbles, zucchini, yellow squash, mushrooms.

 

Spread pita bread with sauce.  Top with toppings of your choice.  Spoon cheese on top.  Sprinkle with Italian seasonings and finish with sliced olives.  Bake at 400 degrees directly on oven rack for 10 minutes.  Serve immediately.






QUICK & EASY CHEESE

12.3 OZ firm, silken tofu (or 1 ½ cups cooked millet or cornmeal mush)

2 ½ TBS. tahini or sesame seeds

½ cup pimentos or fresh red bell pepper

½ cup water

2 TBS.  nutritional yeast flakes

2 TBS. lemon juice

¾ tsp. salt

1 ¼ tsp. onion powder

¼ tsp. garlic powder

Combine all ingredients in a blender and blend until smooth.  Serve immediately or chill before serving.
