Three Apple Spice Cake

THREE APPLE SPICE CAKE
1 1/2 cups WW pastry flour
1 1/2 cups unbleached flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp salt

1 (15 oz) can red kidney beans, rinsed and well drained
1 cup unsweetened applesauce
1/2 cup apple juice
1/4 cup oil
1 1/2 cup dry sweetener
4 1/2 tsp Ener-G Egg Replacer
2 tsp vanilla extract

1/2 cup walnuts
1 large tart apple cored and quartered

Preheat oven to 350. Spray a 13x9x2 pan or a 10-12 cup capacity bundt pan.

In a large mixing bowl combine the flours through the salt.

In a blender or food processor, combine all but the walnuts and apple. Whiz till smooth then add the walnuts and apple and pulse until finely chopped. Lightly stir the wet ingredients into the dry just until they are moistened.

Bake 40-45 minutes for the cake pan, 45-50 for the bundt or till a toothpick comes out clean. Leave the cake in the pan for 10 minutes, invert onto a serving platter and cover lightly with a clean towel till completely cool. Cover till ready to serve. Refrigerate to maintain freshness.
