Oat-Wheat Crackers

Oat-Wheat Crackers

3 cups rolled oats
2 cups whole wheat flour
1 cup wheat germ
1 Tb sugar
1 tsp salt
1¼ cups water
½ cup oil

Combine dry ingredients in large bowl and mix well. In small bowl, combine oil and water. Beat with a fork to emulsify, then pour slowly into dry mixture. Mix well and knead lightly. Divide into two equal portions and place each on two 10x15 sprayed cookie sheets. Flatten with fingers then use a rolling pin or cylindrical glass to roll evenly across each sheet until thin. Score dough into crackers of desired size. Heat oven to 400 degrees. Place trays in oven and immediately reduce heat to 325 degrees and bake for 25 minutes or until lightly browned. Loosen with spatula and let cool on cookie sheet. Makes approximately 75 1½"x1" crackers.
