Tofu Mayonnaise

Tofu Mayonnaise

1 pkg (12 oz) silken tofu, firm (Mori-Nu)
½ cup cashew pieces
¼ cup water
1 Tb lemon juice
½ tsp onion powder
1 tsp garlic powder
½ tsp salt
1 Tb dried dill

Blend everything except dill until very smooth. Pour into bowl and add dill, mixing well with spoon. Cover and refrigerate, chilling for a couple hours to allow flavors to marinate before serving. Use on sandwiches, buns, veggie burgers, salads, or as a veggie dip. Makes 1½ cups.
