Sloppy Joes


Sloppy Joes:
1 onion, diced
1 green pepper, diced
1 tomato, diced
1 pickle, diced
1 Tb lite soy sauce 
2 tsp chili powder
1 recipe sauce (see below)
3 cups Boca or Griller burger crumbles (or shredded seitan, bulgar wheat, etc.)
(or 1˝ cups dry textured vegetable protein (TVP) softened in 1 cup hot water)

Saute onion and pepper 5 minutes. Add remaining ingredients and simmer on low for 20-30 minutes. Adjust seasonings as desired and serve on whole grain bread.


Sauce:
2 Tb olive oil
1 small onion
4 cloves garlic
6 oz tomato paste
2 tomatoes, chopped (or 1 can--14 oz--diced tomatoes)
˝ tsp salt
1 tsp basil
1 tsp oregano
˝ tsp pepper

Place everything in blender or food processor and blend until smooth, then set sauce aside.
