Red Beans and Rice

Red Beans and Rice

½ onion, chopped
1 clove garlic, minced or pressed
1 sweet potato, diced
¾ cup celery, diced
2 (14 oz) cans red beans, rinsed
1 cup water
3 cups cooked brown rice
1½ tsp cumin seeds (or 1 tsp cumin powder)
1/8 tsp pepper
½ tsp salt
½ tsp chili powder
1 lemon

Steam saute the onion, garlic, celery, and sweet potato until potatoes are just soft. Add beans, water, and spices and cook over medium-low heat for about 10 minutes. When hot and ready to serve, squeeze juice of 1 lemon over the mixture. Serve hot over brown rice, or simply add the rice to the pot and stir through.
