Rice Noodles w/Ginger and Snow Peas

Rice Noodles w/Ginger and Snow Peas

8 oz. Rice noodles
1 Tb. olivevoil
1 Tb. Ginger root, diced
3 Cloves garlic, diced
3 Scallions, thinly sliced
1 Green chili, seeded and chopped
½ Cup shredded carrot
20 Snow peas
½ tsp. Salt
¼ Cup fresh cilantro, chopped

Soak noodles in hot water, then drain and set aside. Saute ginger and garlic in oil for 2 minutes. Add scallions, chili, carrot, and snow peas and saute an additional 2 minutes. Stir in salt, then add noodles and toss to coat well. Remove from heat and serve immediately with fresh cilantro.

Serves 4-6
