Rhubarb Pineapple Crisp

Rhubarb Pineapple Crisp

1 cup nuts, ground
1 ½ cup chopped dates or date sugar
1 ½ cup oatmeal
½ cup flour
¾ tsp. salt

Mix above ingredients well. It will be crumbly. Use half for bottom, half for top.

1 cup rhubarb
2 cups crushed pineapple in own juice
¾ cup pineapple juice concentrate
¼ tsp. salt
¼ cup cornstarch or arrowroot
1 tsp. lemon juice

Cook to thicken. Put together with above mixture in baking dish and bake 30-40 minutes at 350. Makes 8 ½ cup servings
