"Cheese" Sauce

"Cheese" Sauce

¼ cup raw cashews
2 Tb sesame tahini (optional)
1 Tb lemon juice
4 oz. jar pimentos, drained
¼ tsp garlic powder
1 tsp onion powder
1 tsp salt
¼ cup nutritional yeast flakes
¼ cup cornstarch
2½ cups water, divided

Bring 1½ cups of the water to a boil in a saucepan. Blend remaining ingredients, including the remaining 1 cup of water, until very smooth. Pour mixture into the boiling water, whisking and cooking until sauce is desired thickness. Serve immediately over broccoli, pasta, potatoes, toast, burritos, etc. or use in casserole. Makes about 3 cups. May be frozen and then reheated until smooth at a later time.
