Karina's Macaroons

Karina's Macaroons

1 cup chopped prunes, apricots, or other dried fruit
¼ cup water
1 tsp vanilla
½ cup honey
2 cups unsweetened shredded coconut
½ cup oat flour (blend quick oats in blender to make flour)
½ tsp salt

Combine all ingredients. Let stand in bowl for 10 minutes. Shape into small cookies and place on a nonstick cookie sheet. Bake at 350 degrees for about 25 minutes or until golden. Makes about 24 macaroons.
