Black Bean Raisin Bread

Black Bean Raisin Bread

1 cup cooked, well-drained black beans

7/8 cup water

2¼ cups whole wheat flour

¼ cup gluten flour

1 tsp sea salt

2 Tb molasses

1 Tb canola oil

2¾ tsp active dry yeast

½ cup dark raisins


Puree beans and water until almost smooth. Attach kneading blade in the bread machine pan, then measure in the flours and salt. Add pureed bean mixture, molasses, oil, raisins, and yeast. Program the bread machine for the whole wheat mode. At the end of the baking cycle remove bread promptly and allow to cool on a wire rack before slicing or wrapping.

(Alternatively, you can program the machine for the Dough mode. When the dough mode is completed, dump out the dough on a floured board, then form into the shape of loaf and put in sprayed loaf pan. Allow dough to rise again in warm oven (about 45 minutes), then bake in oven at 350 degrees for about 35 minutes.) Makes a 1 lb. loaf.
