Mandarin-Romaine Salad

Mandarin-Romaine Salad

 

8 cups romaine lettuce, chopped

1 cup green onions, sliced

1 can (8 oz), mandarin oranges, drained

¼ cup sliced almonds, lightly toasted


Dressing:

3 Tb olive oil

3 Tb lemon juice

2 tsp honey

1 tsp parsley flakes

Combine dressing ingredients and mix well, then place in refrigerator. Toss together the salad ingredients. Just before serving, toss the salad with the dressing. Serve immediately. Serves 8.
