½ cup ground unsalted sunflower seeds
2/3 cup ground walnuts
¾ cup whole wheat bread crumbs
2 medium raw potatoes, grated
1 cup soy or nut milk, unsweetened
1 small onion, chopped fine
1 clove garlic, chopped fine
¾ tsp salt
½ tsp sage
¼ tsp garlic powder
Optional: ¾ cup dry textured vegetable protein (TVP) + additional ¼ cup milk
Combine all ingredients in bowl and mix well. Pour mixture into sprayed loaf pan and bake at
350 degrees for 45 minutes. Then uncover and bake another 15 minutes. Optionally, pour mixture into a sprayed medium-sized
crockpot and cook on low for 7-8 hours. Great as a main dish with baked potatoes for supper, or used leftover in sandwiches
with Nayonaise and sweet pickle relish.
