2¼ cups whole wheat flour
¼ cup gluten flour
1 tsp sugar
¾ tsp salt
1 cup water
2 Tb olive oil
2¾ tsp active dry yeast
Place all ingredients in bread machine. Program the machine for the dough mode. When the machine cycle is finished,
turn the dough out onto lightly floured surface. Let dough rest for 10 minutes. Lightly oil a 12” pan and sprinkle with
cornmeal. With floured hands, gently stretch dough out until it covers entire surface, making an edge against the rim of the
pan. Cover with your choice of sauce and toppings and bake in a 400 degree oven for 20-25 minutes. Crust may also be baked
without toppings—prick the crust in several spots with a fork, and bake about 15-20 minutes. Allow to cool and use for
cold pizzas, such as Veggie Pesto.
