1 Tb olive oil
1 onion, diced
4 cloves garlic, diced
1 cup corn
1½ cups Griller crumbles, TVP,
or cooked barley
1 14 oz can Crushed tomatoes
1 14 oz can diced tomatoes
2 14 oz cans beans (red, black,
pinto, kidney, etc.)
1½ tsp chili powder
1 tsp cumin
1 tsp oregano
½ tsp salt
1 cup water (approximately...adjust to desired consistency)
Saute onion, garlic, and crumbles
in olive oil. Add corn, tomatoes, beans, and seasonings and water. Bring to a boil, then reduce heat and simmer for 20 minutes.
Adjust seasonings if desired (to make it spicier, for instance). Serve with guacamole, soy sour cream, chopped black olives,
chopped green onions, and tortilla chips, if desired.
