3 cups whole wheat flour or whole wheat pastry flour
½ tsp salt
3 Tb oil
1 cup water
Combine all ingredients in bowl until a ball of dough forms. Adjust water
or flour to make dough somewhat elastic but not sticky. Pinch off a bit of dough, the size of a golf ball or a little smaller.
Pat down then roll out on a board, using extra flour to keep from sticking. Roll out quite thin, then place either on a hot
griddle at about 400 degrees or in frying pan on medium-high heat. Cook about 30-45 seconds on each side. Stack under a towel
as you work, as the heat and steam keep them softer. Recipe should make about 16 tortillas. These do tend to get a bit hard
after sitting awhile. To make them tender again, wrap about 8 tortillas in a damp dish towel and microwave about 1 minute.
