Topping:
2 lbs potatoes (about 6 medium potatoes)
1/3
cup unsweetened soy milk
1 Tb Earth Balance

tsp salt
Place potatoes in a saucepan and cover with water and simmer until soft. Drain
potatoes and mash well with soy milk, Earth Balance, and salt.
Filling:
16 oz bag frozen peas and carrots
1/3 cup water
1 tsp Italian seasoning
2 tsp onion powder
2 tsp beef-like seasoning
½ tsp salt
½ tsp garlic powder
2 cups Boca burger crumbles or Griller recipe crumbles
1 can (8 oz) tomato sauce
½ cup unsweetened soy milk
Combine ingredients in a deep 9x9 or 1½ quart casserole. Spread the mashed potatoes over
top of the veggie/crumbles mixture. Bake at 375 degrees for 30 minutes covered and then 15 more minutes with the lid off.
