2 cups warm water
1 rounded TBS. yeast
2 TBS. honey
2 tsp. salt
¼
cup olive oil
1 ½ cup cornmeal
1 cup whole wheat pastry flour
1 cup unbleached white flour
Mix
1st. three ingredients and allow to proof. Add the remaining ingredients and mix only enough to evenly moisten the batter.
Place in a 9”x9” baking dish, sprayed with non-stick spray. Cover with plastic wrap, stretching the plastic
tightly across the baking dish. Let rise about 20 minutes, until batter has doubled. Remove plastic wrap and bake at 400
degrees for 35-40 minutes until golden brown. Allow to cool slightly before removing from pan.
