1 1/2 cup onions, chopped
2 cloves garlic, minced

cup celery, chopped
1 Tb olive oil (or water)
2 cups dry red lentils
1 1/2 tsp ground coriander
3/4 tsp salt
1/2 tsp curry powder
6 cups water
1/2 cup cilantro, chopped
In
soup pot, saute onion, garlic, and celery in oil or water for 5-10 minutes. Add lentils, coriander, salt, and curry powder
and combine well. Then add the water, bring to a boil, then reduce to a simmer for about 15 minutes or until lentils are
soft. Remove from heat, then add cilantro just before serving.
