Oat mixture:
Mix 3 TBS. Earth Balance, 1 cup quick
cooking oats, ¼ cup of flour & ¼ cup Sucanat. Set
aside.
In another bowl mix:
¾ cup Sucanat
1 cup unbleached flour
1 cup whole wheat flour
1 TBS baking powder
1 tsp. cinnamon
½ tsp. salt
¼ cup canola oil
1 cup unsweetened non-dairy milk
2 TBS. water + 1 ½ tsp. egg
replacer (mix together)
2 cups blackberries
1 cup blueberries
¼ cup chopped walnuts
Spread ½ the batter in pan,
sprinkle with ½ the oat mixture. Add remaining batter and
sprinkle other ½ of oat mixture on top. Sprinkle with
walnuts. Bake 350 degrees for 40-45 minutes. Serves 12.
