Mashed Yams

Mashed Yams

4 yams, peeled and sliced
1 Tb lemon juice
2 Tb soy milk
1/4 tsp nutmeg
1 banana, sliced

Cover yams with water and bring to a boil.  Add lemon juice and boil until tender, about 30 minutes.  Drain off water, add milk and mash until smooth.  Top with nutmeg and banana slices.
