Brownies

Brownies

1 cup cashews
2/3 cup water
1/2 cup sucanat
1/3 cup carob powder
1 Tb Roma or other coffee substitute
1/2 tsp salt
1 tsp vanilla
2 tsp egg replacer powder
1 tsp lemon juice
1-1/2 cups flour
2-1/2 tsp baking powder
1/2 cup chopped walnuts

Preheat oven to 350 and spray an 8x8 pan and set aside.  Blend cashews and water until smooth.  Add next 7 ingredients and blend again.  Add this mixture to flour and baking powder.  Stir well and then fold in nuts.  Pour into pan and bake 35-40 minutes.  You can frost these by melting 1-1/2 cups carob chips for 1 minute in the microwave, then spread over the top and sprinkle with nuts if desired.
