Maple
Pecan Sweet Rolls – 18 rolls (bake in two 8x8 pans)
STEP
1: MIX BREAD DOUGH - (Dough
(for bread machine)):
Spray
bread machine bowl/case w/non-stick spray
1½
cups unsweetened soymilk
1
Tbsp. ENRG Egg Replacer
¼
cup water
4.5
cups flour (½ wheat/½ white, or any other combination
you wish to try)
3
Tbsp sucanat
1½
tsp. Salt
1/3
cup Earth Balance
2½
tsp. Fast rise yeast
Follow
bread machine recipe for time (mine is the “dough” setting for 1½
hours)
STEP
2: ALLOW DOUGH TO RISE
Remove
dough from bread machine bowl & place in a non-stick sprayed
large metal bowl in a warm oven/area (suggestion: turn an oven on
warm for apx. 3-5 minutes, then turn oven off, then place bowl of
bread in oven covered by a lightweight dish towel). Let rise for
apx. 25 minutes.
STEP
3: PREPARE PANS FOR ROLLS
Spray
both 8x8 pans with nonstick spray.
Pour
apx. ½ cup real maple syrup into the bottom of each pan.
Sprinkle
apx. ¼ – 1/3 cup pecans over syrup.
STEP
4: ROLL OUT THE DOUGH/ROLLS
Sprinkle
a light coat of flour on your bread board surface.
Divide
dough into 2 apx. equal sections.
Roll
each section out, then spread apx. 1 Tbsp. Earth Balance over the
rolled-out dough.
Sprinkle
apx. 1½ tsp. Sucanat across dough
Sprinkle
apx. ½ tsp. Cinnamon (or however much you like) across dough
Roll
up the dough & pinch the edges to seal dough.
Cut
the roll into apx. 1 inch slices
Place
slices into pans.
Let
rise for apx. 45 minutes (until rolls are to top of pan)
Remove
from oven & preheat oven to 400 degrees
Bake
rolls for apx. 20-22 minutes
Remove
from oven and flip out onto foil to cool.
