CHEEZY SPREAD
1 can cannellini
beans rinsed and drained
½ cup pimiento
pieces, drained
6 TBS. nutritional
yeast flakes
3 TBS fresh lemon
juice
2-3 TBS Tahini
½ tsp. onion
granules
½ tsp. prepared
yellow mustard
½ tsp. salt
Place all the
ingredients in a food processor and process several minutes until the mixture
is completely smooth and no flecks of pimiento are visible. You may have to
stop and scrape down the
sides once or twice. The finished product should be very thick, smooth, and
creamy with an even orange color. Serve
immediately, or transfer the mixture to a storage container and chill in the
refrigerator. It will keep for about a
week.
