1 cup quinoa 2 cups non-dairy milk 1 tsp. nutmeg ¼ cup raisins or currants ½ tsp. grated ginger 1
tsp. orange zest 1 cup crushed pineapple
Place milk and quinoa into a medium saucepan and bring to a boil over medium heat. Reduce heat to simmer, cover
and cook until all milk is absorbed. Add nutmeg, raisins/currants, ginger, orange zest and stir to combine. Add
crushed pineapple just before serving and stir through. Top with additional crushed pineapple and raisins/currants to
serve. Serves 2
