1 cup long grain brown rice, uncooked
1 tsp. olive oil
3 tsp. chicken style seasoning
2 medium onions, diced
1 pound mushrooms, sliced
2 cloves garlic, minced
1 tsp. basil
1 tsp. oregano
1 tsp. marjoram
1 bay leaf
1 can kidney beans, drained and rinsed
½ cup green onions, tops included, chopped
2 large tomatoes, diced
Cook rice according to directions. Combine
oil, seasonings,
onions, mushrooms and garlic in large pan.
Cook over medium heat until the onions and mushrooms are soft. Add rice and ½ cup water. Stir in beans and green onions and
tomatoes.
