1 cup croutons
3 tbsp olive oil
2 cloves garlic, minced
1 small red onion
4 Tbsp lemon juice
16 oz. Brussels sprouts (pre-shredded bags
are easy)
½ cup fresh parsley
¼ cup fake parmesan cheese
¼ tsp salt
Peel and halve the onion, then slice. Heat 1 Tbsp. oil in saute pan and add onion
and garlic over low heat. Season with
salt and cook slowly until tender.
Remove the pan from heat and add lemon juice and 2 tbsp. olive oil to
pan. Let rest.
Slice Brussels sprouts and put in mixing
bowl. Pour the onion
mixture over this and toss well. Add
parsley and parmesan cheese and croutons.
