Brown Rice Casserole

Brown Rice Casserole

   In a heavy casserole, combine together:

1 medium onion, chopped
2 stalks celery, sliced
2 carrots, sliced
1 cup brown rice
1 cup soy protein--Boca crumbles, soy chicken, tempeh etc. (Optional)

  
Then blend:   

½ cup raw cashews
1 cup water
4½ tsp cornstarch
1½ tsp onion powder
½ tsp garlic powder
1½ tsp lite soy sauce or Bragg Liquid Aminos
½ tsp lemon juice
½ tsp salt
1-2 tsp chicken or beef style seasoning (Optional) 

   Blend above ingredients until smooth, then add:

2½ cups water 

   Blend a few more seconds to mix.  Pour this mixture over the combined rice and veggies.  Cover and place in oven at 300 degrees for 2 hours.
