In a heavy casserole, combine together:
1 medium onion, chopped
2 stalks celery, sliced
2 carrots, sliced
1 cup brown rice
1 cup soy protein--Boca crumbles, soy chicken, tempeh etc. (Optional)
Then blend:
˝ cup raw cashews
1 cup water
4˝ tsp cornstarch
1˝ tsp onion powder
˝ tsp garlic powder
1˝ tsp lite soy sauce or Bragg Liquid Aminos
˝ tsp lemon juice
˝ tsp salt
1-2 tsp chicken or beef style seasoning (Optional)
Blend above ingredients until smooth, then add:
2˝ cups water
Blend a few more seconds to mix.
Pour this mixture over the combined rice and veggies. Cover and place in oven at 300 degrees for 2 hours.
