½ cup raw cashews
1½ Tb flour
3/4 cup water
½ cup finely chopped onion
4 cups diced potatoes
1 cup sliced carrots
1 Tb olive oil
4 cups water
2-3 tsp chicken style seasoning
1 tsp salt
1/4 tsp pepper (optional)
1 cup fresh or frozen green peas
Blend cashews, flour,
and ¾ cup water until completely smooth and creamy, then set aside. Combine onion, potatoes, and carrots in pot and saute
in olive oil for 5 minutes. Add 4 cups water and seasonings. Bring to a boil then reduce to a simmer until potatoes are nearly
tender. Add peas and cashew cream. Stir and heat through until soup thickens just slightly. Serves 4-6.
