2 cans (14 oz) white beans (or 1 white, 1 red), well-rinsed
¼ of a green pepper, diced finely
1-2 cloves garlic, diced finely
½ cup celery, diced finely
¼ cup parsley, chopped finely
½-1 cup canned artichoke
1½ Tb olive oil
2 Tb lemon juice (about ½ of a lemon)
¼-½ tsp salt
dash pepper (optional)
Combine in a large bowl and mix together gently. Best if allowed to marinate for several hours
or overnight. Check seasonings and adjust before serving.
