Two-Bean Chili

Two-Bean Chili

½ lb sliced fresh mushrooms

1 large green pepper, chopped

1 medium onion, chopped

1 jalapeno pepper, seeded and chopped

1 Tb olive oil

4 garlic cloves, minced

2 tsp cumin

1 tsp oregano

1 large carrot, chopped

1 can (28 oz) diced tomatoes

1 can (15 oz) black beans, rinsed

1 can (15 oz) kidney beans, rinsed

1/2-1 bag Griller Crumbles (optional)

½ cup water

½ cup BBQ sauce

¼ cup chili powder

1 tsp liquid smoke


In large skillet over medium heat, saute the mushrooms, peppers, onion, and jalapeno in oil until onion is slightly brown. Add garlic, cumin, oregano; cook and stir 2 minutes. Transfer everything to crock pot. Stir in tomatoes, beans, carrots, water, BBQ sauce, chili powder, and liquid smoke. Cover and cook in crock pot on low for 8 hours.
