Joyce's Bread

Mix in a very large bowl:

2 cups quick oats

½ cup oil

½ cup sweetener

¼ cup sorghum or molasses

1 TBS. salt

Pour over mixture:

2 cups boiling water

Dissolve yeast in water:

4 TBS. dry yeast

½ cup warm water

Add to first mixture, then add yeast.

2 cups cold water

Add and knead.

½ cup wheat germ

½ cup soy flour

2 Tb Vital Wheat Gluten

2 cups whole wheat flour

6 cups unbleached flour



Place in oiled bowl. Turn to oil top. Let rise till double. Punch down. Form into 3 loaves. Put in pans, let rise till double. Bake at 350 for 40 minutes
